Gluten Free Teff Chocolate Cake

A quick and easy chocolate cake, and obviously gluten free.
Very easy to prepare, wonderful for birthdays and of course the most fun on Saturday mornings with coffee (yes yes for us elderlies of the group …).
The teff contains all eight amino acids essential to the human body, it is rich in iron, magnesium, calcium, protein and vitamins and is easy to digest and … gluten free – needless to say. One hundred grams of teff contains iron, calcium and protein in ten eggs or 1 kilo of meat. In other words, it is wonderful for children, and that is why I used it here where the brown color of the teff blends beautifully into a chocolate cake.

- 3 tbsp teff flour
- 2 tbsp potato flour
- 1 tsp Xanthan Gum or Guar Gum
- 200 grams dark chocolate
- 200 grams butter
- 1 cup sugar
- 5 eggs
- 1 bag baking powder 10 - grams
- 250 grams whipping cream for cream
- 100 grams dark chocolate for cream
- In pot, melt chocolate, butter and cup of sugar
- When all is melted, remove from heat, cool a little and start adding egg after egg. Each time mix well
- Add the flour and baking powder and stir well.
- Grease the baking pan with butter and sprinkle with some sugar or line with baking paper. Pour into baking pan and bake at 170 ° C for about 30 minutes. Check with a toothpick to see if ready.
- Melt whipping cream with chocolate.
- Using a wooden skewer, poke holes in the cake while it's still hot and pour the cream over the cake. The cream will penetrate the cake through the holes and moisten it from the inside.
