פשטידת כרישה לראש השנה (וכל השנה…)

On every holiday there are differences between the customs of the Sephardim and Ashkenazim. The wording of the songs is different, the wording of the prayers, the Passover Haggadah is a little different, and more and more, but Rosh Hashanah has the biggest difference in customs, in my opinion.
When I met my wife, I told her about the blessings of Rosh Hashana and the Rosh HaShana “Seder”. She did not really understand what I was talking about, because is about an apple in honey, a pomegranate and that is it. So no … at least not with us.
On Rosh Hashanah there are quite a few dishes and blessings beyond the apple and pomegranate, which of course are accompanied by perfect delicacies.
One of them is a spinach quiche which is actually a kind of a spinach pancake (after all it’s fried and therefore can not really be a quiche …) coming from the blessing of beets – “Remove our sins.” (the word ‘remove’ and the word ‘beets’ have the same root in Hebrew.) How exactly beets have become spinach I have not quite a clue, just as the sweet and wonderful Haroset, is the bitter Maror of Passover ….
To this day I remember how every year we would devour the same fried quiche (both spinach and leek) and complain about why it is eaten only once a year. My mother always claimed that “it’s really easy to prepare and if you want to, I have no problem making it …” And then another year would goby until next time we ate it 🙂
So here’s the gluten-free and non-fried version, for those who want to, for the whole year and not just once a year.
